Banana pudding + Nilla Wafers + Whipped Cream … that’s what I think of when someone says Banana Pudding.  It wasn’t until I was an adult that I realized that the dessert Mom used to make my sister and I was really a kind of a Banana Trifle. Sometimes it is better not to know things. So in honor of this classic banana treat we have gone into the Two Sisters Test Kitchen to do a little tweaking and we have come up with these delicious new Banana Pudding Cupcakes with Nilla Wafers and Whipped Cream Frosting.  Banana Pudding – Check!  Nilla Wafers  – Check!  Whipped Cream – Check!  We’ve got it all in one tasty cupcake.  Enjoy!

Nilla Wafters for Banana Pudding Cupcakes

The “secret” ingredient for our Banana Pudding Cupcakes is a yummy and buttery, Nilla Wafer layer in the cupcake so grab your box of Nilla Wafers and let’s get baking.

Making the Nilla Wafer Crust

Put the Nilla Wafers in a large plastic bag and crush them with a rolling pin.  We didn’t crush them in a food processor because you don’t want the cookies to be too finely crumbled. Melt the butter in the microwave and then add the butter and the sugar into the bag.  Mix thoroughly until the Nilla Wafers crumbs are fully coated with the melted butter.

Add heaping spoonful of Nilla Wafer mixture

Add a heaping tablespoon of the Nilla Wafer mixture to each cupcake liner.

Create a Nilla Wafer layer in the cupcake liner for the Banana Pudding Cupcakes

Use a spoon or your fingers to firmly press down the Nilla Wafer mixture into the bottom of the  cupcake liner.  You want the crust to take up no more than 1/4 of the cupcake liner.

Making the Banana Pudding Cupcake batter

The cake layer of our Banana Pudding Cupcakes was made with this Pillsbury Moist Supreme White Cake mix and a box of Banana Creme Pudding mix.  You can use your favorite cake mix, just make the batter according to the instructions on the back of the box and then add in the pudding mix.

Pour Banana Pudding Cupcakes batter into the cupcake liners

Fill the cupcake liner with the cake batter until it is 3/4 full (as shown above.) Bake the cupcakes as you normally would, 15-20 minutes in a 350 degree oven.

Frost with our The Best Whipped Cream Frosting

We topped our Banana Pudding Cupcakes with our super delicious Best Whipped Cream Frosting. It tastes just like whipped cream but has the consistency of frosting.  This light and not too sweet frosting is perfect for these cupcakes.  You can find the recipe and detailed instructions for making this frosting right here.

Frost the cupcakes as you normally would and store them in an airtight container in the refrigerator.  The cupcakes taste best at room temperature so we suggest that you take them out of the refrigerator a couple of hours before you serve them.

  1. Put approximately 30 Nilla Wafers in a large plastic bag. Crush them very coarsely with a rolling pin.
  2. Melt the butter in the microwave and then add the butter and the sugar into the bag.
  3. Mix thoroughly until the Nilla Wafers are coated with the butter.
  4. Add a heaping tablespoon of the Nilla Wafer mixture to each cupcake liner.
  5. Firmly press down the Nilla Wafer mixture into the bottom of the cupcake liner.
  6. Follow the direction on the back of the box for your White Cake Mix and then add the package of Banana Pudding.
  7. Fill the cupcake liner with the cake batter until it is 3/4 full.
  8. Bake the cupcakes as you normally would, 15-20 minutes in a 350 degree oven.
  9. Top your Banana Pudding Cupcakes with our super delicious The Best Whipped Cream Frosting.
