Our mom always said that you can judge a restaurant by the kind of bread they serve and she was right (as always.) But we’d add one more item to the decision tree, coffee.  Great coffee = great food.  Coffee is delicious and comforting and energizing.  We love it so much that we think it deserves its own Two Sisters’ frosting.  So let us introduce you to our newest homemade icing … The Best Coffee Whipped Cream Frosting.  Light and creamy with the perfect amount of coffee flavoring.  It’s also not too sweet and guess what, it has the consistency of whipped cream!  This one is a keeper.

Starbucks Instant French Roast Coffee

We used Instant Coffee to flavor our The Best Coffee Whipped Cream Frosting. You get the most intense coffee flavor without having to add a lot of extra liquid like you would if you added actual brewed coffee. We like these Starbucks French Roast Instant Coffee packets which you can find in most grocery stores in the coffee aisle.  Pour the entire instant coffee packet into the whipping cream.

Mix the instant coffee with the whipping cream

Stir the instant coffee into the Whipping Cream until it is thoroughly mixed.  You might need to let the whipping cream rest in the refrigerator for a bit so that the instant coffee dissolves completely.

Stain the whipping cream mixture through a colander

If you are having problems getting the instant coffee and the whipping cream completely mixed, run the mixture through a finely gauged colander to filter out the un-dissolved coffee crystals.

Ingredients for The Best Coffee Whipped Cream Frosting

Once the Coffee Whipping Cream mixture is smooth and completely mixed, gather your other ingredients: a box of White Chocolate Pudding and 1/3 cup of Powdered Sugar.

Pour whipping cream in mixing bowl

For best results, put the mixing bowl (stainless steel is the best) you will be using to make the frosting in the freezer for at least an hour prior to making your Coffee Whipped Cream Frosting.  Add the whipping cream to the cold bowl.  

Add Powdered Sugar to the Coffee Whipped Cream Frosting

Mix on high and until soft peaks form. and then add the powdered sugar. Continue to mix on high.
 
Add the pudding to the whipping cream
 
Just before you get to stiff peaks add the White Chocolate Pudding mix.  Lower to a slow speed and continue to mix the whipping cream and the pudding.

When the Coffee Whipped Cream Frosting starts to come together, stop the mixer and scrape down the sides.  Also check to make sure the pudding hasn’t clumped on the bottom. Fold the mixture a couple of times with a spoon.  Turn the mixer back on for just a few revolutions.  DO NOT OVER MIX or you will end up with coffee butter!  If the frosting gets too thick add a little bit of milk 1 teaspoon at a time.
 
How much The Best Coffee Whipped Cream Frosting will you need?
 
How much frosting will you need?  That always depends on how thick or thin you apply the frosting or how much decorating you do but here are a couple of guidelines. Our recipe should make enough The Best Coffee Whipped Cream Frosting to cover a 9″ x 13″ sheet cake or a two-layer 8″ cake.  If you are making cupcakes, you should be able to frost 24 cupcakes if you apply the frosting with a knife.  If you swirl on the frosting with a pastry bag like we have done here, you should be able to frost 15-18 cupcakes depending on the size of the swirl.

Instructions

  1. Add one packet of Instant Coffee to Whipping Cream.
  2. Stir Whipping Cream until Instant Coffee has completely dissolved.
  3. Filter whipping cream through a colander if you have any un-dissolved coffee crystals.
  4. Add Whipping Cream mixture to a chilled mixing bowl.
  5. Turn mixer on high.
  6. Mix until soft peaks form.
  7. Add Powdered Sugar.
  8. Mix at high speed.
  9. Just before you get to stiff peaks add White Chocolate Instant Pudding Mix.
  10. On slow speed, mix whipping cream and pudding.
  11. When it starts to come together, stop mixer and scrape down sides.
  12. Check to make sure the pudding hasn't clumped on the bottom.
  13. Fold mixture a couple of times with a spoon.
  14. Turn mixer back on for just a few revolutions.
