Are you on Team Sugar Cookie or Team Gingerbread Cookies where Christmas Cookies are concerned? We are definitely on Team SC! We have an amazing Sugar Cookie recipe that makes soft and delicious cookies that are perfect for frosting and it is our default Christmas Cookie. Every time we’ve tried to make Gingerbread Men the cookies turned out too dry, too crunchy, just not tasty enough. So we decided to modify our own Sugar Cookie Recipe into a Gingerbread Cookie Recipe and Holy Jingle Bells, it was a huge success. These Gingerbread Men turned out amazing. The cookies are soft enough to eat but sturdy enough to decorate. And the gingerbread flavor is the perfect ratio of ginger and molasses – sweet and spicy and delicious. We hope you enjoy these cookies as much as we did.

To make the Gingerbread Cookie dough, add the softened butter and sugar to your mixer.  Cream the butter and sugar until it is light and fluffy (about 2-3 minutes at least.)  Add the Molasses and the Egg and mix until completely incorporated. Add the spices and mix until combined. Now add the Baking Powder and mix. Add half the flour and mix and then add the remaining flour and mix until just combined.  Don’t mix too much after you have added the flour.  You don’t need to chill the dough, the cookies will bake better if the dough is at room temperature.

This Gingerbread Cookie dough is really easy to roll out.  Place a handful of the dough out on a lightly floured surface and roll it out until it’s about 3/8″ thick. Cut out shapes with a cookie cutter.  Bake the cookies in an oven preheated to 350 degrees for 9-10 minutes depending on the size of the cookie. You don’t want to over-bake the cookies but they should be firm but not too browned around the edges.

Allow your Gingerbread Cookies to cool and then they are ready for decorating.  We decorated our Gingerbread Men with Royal Icing. What type of Molasses should I use?

We use Grandma’s Original Molasses.  We think Dark or Blackstrap Molasses is too intense for this type of cookie but if you want spicy … go ahead and use the darker variety.

What frosting should I use to decorate these cookies?

Gingerbread Cookies are typically decorated with Royal Icing.  You can find our Royal Icing Recipe right here.  But they would also taste delicious with our The Best Buttercream Frosting recipe.

How to Store/Freeze?

Like all cookies, if you don’t freeze or refrigerate them they will stay fresh for about 3-4 days.  They should last up to two weeks in the refrigerator and 3 months in the freezer if you store them in an airtight container.  We usually add a piece of parchment paper between the layers of the cookies in the container.

Is this a good recipe for a Gingerbread House?

We tweaked this recipe so it would be best for eating, it probably is not sturdy enough for a Gingerbread House. But you can definitely make delicious Gingerbread Men or other cut-out Gingerbread cookies with this recipe.

Ingredients

  • 1 cup Butter (Sweet Cream Salted butter, softened to room temperature)
  • 1 cup Granulated Sugar
  • 1 large Egg
  • 1/2 cup Molasses (regular)
  • 3 cups All-Purpose Flour
  • 2 teaspoons Baking Powder
  • 2 teaspoons Ground Ginger
  • 2 teaspoons Ground Cinnamon
  • 1/2 teaspoons Ground Nutmeg

Instructions

  1. Add softened butter and sugar to your mixer.  Cream the butter and sugar until it is completely mixed.
  2. Add Molasses and Egg and mix until completely incorporated.
  3. Add Spices and mix until combined.
  4. Add Baking Powder and mix.

  6. Do not chill the dough, the cookies will bake better if the dough is at room temperature.
  7. Roll a handful of the dough out on a prepared surface until it's about 3/8" thick and cut out shapes with a cookie cutter.
  8. Bake at 350 degrees for 9-10 minutes depending on the size of the cookie. Bake until firm but do not overbake.
