Who doesn’t love Banana Cake? Not us, that’s for sure. It is one of our all-time favs. But sometimes you don’t have enough time to bake a cake. In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs and vanilla.
Mash the bananas and mix the bananas into the batter.
Mix in the baking soda, salt and cinnamon. Mix well. Add the flour and mix until combined.
This is a wet dough so we used a spoon to drop approximately 2 oz. of dough onto the cookie sheet as shown above.
Bake the cookies in a 375 degree oven for 8-10 minutes or until light brown around the edges. Here is what the cookies look like just out of the oven – cakey, just like banana bread.

- 1/2 cup Butter (Sweet Cream Salted)
- 1 cup Granulated Sugar
- 2 Eggs
- 1 teaspoon Vanilla
- 1/2 teaspoon Cinnamon
- 2 1/4 cups All-Purpose Flour
- 1 teaspoon Baking Soda
- 1/2 teaspoon Salt
- 4 medium Mashed Bananas (equivalent of 1 cup)
- The Best Cream Cheese Frosting
- Decorating Bag
- Wilton 2D Decorating Tip
- Handful of chopped Pecans or Walnuts
- In a large bowl, cream butter and sugar until light and fluffy.

- Add the mashed bananas and continue mixing.
- Mix in the baking soda, salt and cinnamon. Mix well.
- Add the flour one cup at a time and mix until combined.
- Bake in a 375 degree oven for 8-10 minutes.
