Rotel Dip is a super delicious spicy cheese dip recipe, very similar to queso only much easier to make. You’ll only need three ingredients and 20 minutes to make this yummy cheesy party dip!

My husband had this Rotel Dip at a party. He loved it and raved about it for weeks. He hounded me to make it and when I did I found I loved it too. Cheesy and creamy with just the right amount of heat …. so good. Now we make it for every party we have and it is ALWAYS a crowd-pleaser. We hope you love it too!

How to Make Ro-Tel Cheese Dip

Step 1: Brown the ground beef in a pan and then drain any grease. Cut the Velveeta Cheese block into cubes. Add the cheese cubes into the pan with the ground beef and stir over medium heat until the cheese is completely melted. Add the can of Ro-tel Tomatoes.

Step 2: Continue to stir until thoroughly combined and the dip is fully heated.

This spicy queso dip tastes best served warm with chips or bread. If you want to keep it warm throughout your party, you can put it in a crockpot on low.

How long will the Rotel Dip last?
Store it in an airtight container in the refrigerator. It should last 3-4 days. Heat it up in the microwave when you want to have some.

Do you have to use Ground Beef?
We use ground beef but this dip also tastes yummy with ground sausage too.

What are Ro-Tel Tomatoes?
Very similar to salsa, these canned tomatoes also include green chiles and other spices. We use the original version but they have a Hot version too if you like your cheese dip EXTRA spicy.
