How to Prepare the Dry Ingredients

Step 1: In a bowl, add the flour, cocoa powder, and baking powder.
Step 2: Whisk the dry ingredients together until the cocoa powder is completely mixed with the flour.

How to Melt the Chocolate

Step 3: Melt the butter in a microwave safe bowl and then add a cup of Chocolate Chips.
Step 4: Whisk until the Chocolate Chips are combined with the butter and are completely melted.  Set the chocolate aside to cool while you make the rest of the cookie dough.

Step 5: Add the Granulated and Brown Sugars, Eggs, and Vanilla to a mixing bowl.
Step 6: Mix 2-3 minutes or until the batter is light and frothy.
Step 7: Pour melted chocolate into the batter.
Step 8: Mix until thoroughly combined.

Step 9: Add the flour and cocoa mixture to the cookie batter a bit at a time.
Step 10: Mix until just combined.
Step 11: Fold the Chocolate Chips into the cookie dough and chill the dough for one hour.

Baking Instructions

Step 12: Roll the dough into a ball and place it on a prepared cookie sheet.
Step 13: Bake in a preheated 350-degree oven for 9-11 minutes or until the cookie is set around the edges. Cool on a cooling rack.

How do you prepare the cookie sheet?
We always line our cookie sheet with a piece of parchment paper, it keeps the cookie from sticking to pan and helps the cookie from over-browning. 

How to Store/Freeze Chocolate Brownie Cookies
Brownie Cookies should be stored in an airtight container. They will stay fresh longer if they are completely cool before you pack them up.  We usually add a layer of parchment paper between each row of cookies in our plastic container. The cookies will be fresh for 2-3 days at room temperature. If you want them to last longer, you should freeze them. They will be fine in the freezer for 2-3 months.

Why didn’t the top of my Brownie Cookies crackle?
You probably didn’t beat the cookie dough enough after you added the eggs. We recommend mixing the batter at least 2-3 minutes after you add the eggs with a mixer. You want the batter to be light and frothy and full of air.

These Brownie Cookies are soft, fudgy, chock full of chocolate chips, and taste just like a homemade brownie with a delicious crackly top. This is the only chocolate cookie recipe you will need!

Ingredients

  • 1/2 cup Melted Butter (Sweet Cream, Salted)
  • 1 cup Semi Sweet Chocolate Chips (to melt)
  • 1 cup Granulated Sugar
  • 1/4 cup Brown Sugar (packed)
  • 2 large Eggs (room temperature)
  • 2 teaspoons Vanilla Extract
  • 1 cup All-Purpose Flour
  • 1/2 cup Unsweetened Cocoa Powder
  • 1 teaspoon Baking Powder
  • 3/4 cups Semi Sweet Chocolate Chips (to add to cookie dough)

Instructions

  1. Melt the butter in the microwave. Add a cup of Chocolate Chips and stir until Chocolate Chips are combined with butter and completely melted.  Set the chocolate aside to cool while you make the rest of the cookie dough.
  2. Add the Granulated and Brown Sugar, Eggs and Vanilla to a mixing bowl and mix 2-3 minutes or until light and frothy.
  3. Pour in the melted chocolate and mix until combined.
  4. In a separate bowl, add the flour, cocoa powder and baking powder and mix until cocoa powder is completely mixed with the flour.
  5. Add the flour and cocoa mixture to the cookie batter a bit at a time and mix until thoroughly combined.
  6. Add Chocolate Chips to the cookie dough.
  7. Chill the dough for one hour.
  8. Roll the dough into a ball and place on a prepared cookie sheet.
  9. Bake in a pre-heated 350 degree oven for 9-11 minutes or until the cookie is set around the edges.
  10. Cool on a cooling rack.
