For most of our lives we had no idea how to make dinner rolls from scratch.  The whole process seemed daunting and those packaged dinner rolls taste good and only take 10 minutes to warm up.  Wasn’t that good enough?  NO! It was not good enough.  Homemade dinner rolls, hot out of the oven, are so much better.  Light and fluffy and buttery … so  delicious.  And guess what? If you follow the directions we’ve laid out here, they aren’t that hard to make either.  So grab the yeast … we are right here with you … and let’s make some bread!

How to make the dough

Step 1: Heat 1/2 cup of water in the microwave. It should be in the range of 100 and 110 degrees Fahrenheit.   We try to get the water to be as close to 105 degrees as possible. 
Step 2: Add the active yeast to the water, give it a stir and allow it to bloom for about 10 minutes. It will begin to slightly bubble.
Step 3: In a medium-sized bowl, mix the rest of the milk, the sugar, the melted butter, and the yeast mixture.
Step 4: Whisk together until combined.

Step 5: Add all of the flour and the salt to the mixing bowl.
Step 6: Pour the milk/yeast mixture into the bowl.
Step 7: Using the hook attachment, mix on medium for about 5 minutes. If the dough is too wet, add a little more flour, one tablespoon at a time.  If you don’t have a mixer with a bread attachment you will need to knead the dough by hand for approximately the same amount of time.
Step 8: The dough is the right consistency when it begins to cleanly pull away from the sides of the bowl.

Step 9: Cover the bowl with a towel and allow the dough to rise at room temperature for at least 60 minutes.
Step 10: The dough is ready when it has doubled in size.
Step 11: Punch down the dinner roll dough while it is still in the bowl.
Step 12: Remove the dough from the bowl.

Baking Instructions

Step 13: Divide the dough into equal portions (we used a scale to make sure each roll would be the same size.)  We made 12 large-ish rolls but you can make about 16-20 with this recipe. Use your hands to form the dough into a ball. Fold the rough edges onto the bottom of the dough ball.
Step 14: Place the rolls in a buttered 9×13″ baking dish. Cover the dish with a towel and allow the rolls to rise for another  30 minutes.
Step 15: Brush the rolls with melted butter.  
Step 16: Bake in an oven preheated to 375 degrees Fahrenheit for 18-20 minutes or until they the rolls are Golden Brown on the top.  If they are getting too brown, cover them with a piece of aluminum foil for the last half of the baking time. Serve immediately.

How do I know when the dinner rolls are done baking?

They should be Golden Brown on the top and they should be 190 degrees Fahrenheit inside.  Use a thermometer to test one if you are not sure. 

Can I freeze Dinner Rolls?

Definitely.  Wrap them in aluminum foil and freeze them. Defrost the day before you will be serving them and then heat them up in the oven in the aluminum foil.
