Christmas is our favorite Holiday.  Thanks to our mom we have so many fun Holiday traditions that we did as children that we still continue to do to this day.  One of them is to watch How the Grinch Stole Christmas on TV.  These Grinch Family Movies have definitely got more elaborate as the years have gone on.  We used to have popcorn and hot chocolate as we huddled in front of the TV in our Christmas jammies.  Now we debut a brand new Grinch-themed treat every year (but the Christmas jammies are still a thing.)  These Grinch Cake Bites are fun and pretty and since they are topped with our delicious Buttercream Frosting you won’t believe the compliments you will get from your guests!  If you are looking for something different to bring to your office Holiday party or you want to take your Grinch Family Movie Night to the next level … give these a try this December! 

How to Make

Step 1: Make up a box of White Cake Mix according to the instructions on the box.
Step 2: Once completely mixed, tint the cake batter green.  If you are using the Wilton Color Right Food Coloring you can get a great Grinch Green with 4 drops of Yellow and 1 very small drop of Blue.
Step 3: Mix until the food coloring is completely incorporated with the cake batter.

Step 4: Instead of baking the cake in a traditional cake pan we lined a cookie sheet with parchment paper and poured the cake mix onto it.

Step 5: Let the cake batter sit on a flat counter for 10-15 minutes to allow it to settle and even out.
Step 6: Bake the cake in a 350-degree oven for 17-20 minutes.

Steps 7-8: Once the cake has cooled you can cut out your round mini-cake bites.  We used a 2″ round biscuit cutter.  We made 27 cake bites.

How to Make the Frosting

Step 9: Now you need to make some of our amazing The Best Buttercream Frosting.  Tint the frosting Grinch Green using 3 drops of Yellow Food Coloring and one small drop of Blue food coloring.

Putting it All Together

Step 10: Add a small swirl of The Best Buttercream Frosting to the top of the Grinch Cake Bites with a 2D Decorating Tip.

Step 11: Finally, place a large Red Sprinkle on top of the frosting swirl! You can find them on Amazon or in the Cake Decorating section of most craft stores.

One note about the cake bites … if you are going to make these ahead of a party, store them in the refrigerator in an airtight container because unlike a cupcake that is protected by a cupcake liner, the sides of the cake bite are exposed and will dry out if left out too long.

  6. Once the cake has cooled, cut out your round mini cake bites with a 2” round biscuit cutter.
  7. Make a batch of our The Best Buttercream Frosting and tint it Grinch Green.
  8. Add a small swirl of the Grinch Green The Best Buttercream Frosting to the top of the Grinch Cake Bite.
  9. Place a large Red Sprinkle on top of the frosting swirl.
