What says the Christmas Holidays more than Gingerbread?  And Gingerbread doesn’t always have to come in cookie form.  Gingerbread Cake is one of our favorite Christmastime treats.  We’ve repurposed a classic Gingerbread Cake a bit and come up with a fun and unique Gingerbread Mini Cake. This is the perfect dessert for when you don’t have time to make a cake but cupcakes are not quite fancy enough.  If you are throwing a Holiday dinner party this year, give these delicious Gingerbread Mini Cakes a try!

How to Make the Gingerbread Cakes

Step 1: Our Gingerbread Mini Cakes starts with our easy-to-make Homemade Gingerbread Cake recipe.  You can find detailed instructions on how to make this perfectly yummy Gingerbread Cake right here. Another option is to use a Gingerbread Boxed Cake Mix, like the one pictured here.

Step 2: Pour the Gingerbread Cake batter into a Wilton Whoopie Pie Pan.  Bake in a 350-degree oven for 8-10 minutes. When they are done, the tops of the Mini Cakes will spring back when you lightly press down on them.

How to Make the Gingerbread Frosting

Step 3: While the Gingerbread Mini Cakes cool, make a batch of our delicious The Best Gingerbread Buttercream Frosting.  Super creamy with just the right amount of gingerbread flavor, you’ll find detailed instructions on how to make this yummy frosting right here.

Step 4: Place the Gingerbread Frosting into a decorating bag with a Wilton 2D decorating tip.

Step 5: Using a Wilton 2D decorating tip we swirled on the Gingerbread Buttercream Frosting in a rosette pattern. This is easy to do with this particular tip. Just start in the center and swirl the frosting in circles until you get to the outside of the cupcake top.  You can see a video of how to do this in our Five Ways to Decorate a Cupcake post.

Ingredients

  • 1/2 cup Butter, Softened to Room Temperature
  • 1/2 cup Brown Sugar (packed)
  • 1 Large Egg
  • 1/2 cup Milk
  • 1/2 cup Molasses
  • 1 1/3 cup All-Purpose Flour
  • 1 heaping teaspoon Cinnamon
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 1/2 heaping teaspoon Ground Ginger
  • 1/2 teaspoon Nutmeg
  • 1 batch of our The Best Gingerbread Buttercream Frosting
  • Wilton Whoopie Pie Pan

Instructions

  1. Cream together butter and brown sugar in mixer
  2. Add egg, milk and molasses and mix. Mixture will not be fully incorporated.
  3. In medium bowl add dry ingredients and mix.
  4. Add flour mixture into wet ingredients.
  5. Mix until incorporated. Do not over mix
  6. Pour batter into a square pan.
  7. Bake in 350 oven for 20-25 mins.
  8. Allow Mini Cakes to cool,
  9. Make a batch of our The Best Gingerbread Buttercream Frosting.
  10. Using a Wilton 2D decorating tip we swirled on the Gingerbread Frosting in a rosette pattern.
