Our Easter M&M Sugar Cookie Bars are yummy edible Easter Eggs that are fun and easy to make.

Sugar Cookie Bars are a family favorite. This year for Easter we tried something new, we added both Sprinkles and M&M’s to the dough. We really love this new version. The crunchy and colorful bits of chocolate really add something to this cookie.  For some Easter fun we cut them out with Easter Egg cookie cutters instead of the traditional square.  Fun, fun, fun!  We will definitely be making this one again.

Cookie dough for Easter M&M Sugar Cookie Bars

Mix softened butter and sugar in mixing bowl until fluffy. Add vanilla and eggs and mix. Add dry ingredients.

Add sprinkles to the Easter M&M Sugar Cookie Bars

Add 1/2 cup of sprinkles to the dough.  We made our own sprinkles for our Easter M&M Sugar Cookie Bars.  You will find all the directions to make your own right here.

Add Bunny Mix M&M's to cookie dough

Now add a cup of Bunny Mix M&M’s.

Gently mix the sprinkles and the M&M’s into the dough.

Preparing the dough to bake

Cover a cookie sheet with parchment paper.  Pour all of the dough out onto the prepared cookie sheet.  Press the dough down onto the cookie sheet.  The dough is soft and sticky so it is a little tricky to get the dough evenly distributed in the cookie sheet.  Cover the dough with another piece of parchment paper and use that to press it down into the cookie sheet.  You want the dough to be about 3/4″ high. It will rise to about 1″ high during the baking process.  Sprinkle the top of the dough with sprinkles and press some M&M’s down into the dough.

Bake the Sugar Cookie Bars in a 375 degree oven for 10-15 minutes.  Do not over bake the cookies.  It will not come out of the oven a golden brown – in fact, it might look a little un-done but it is not.  Use a toothpick to test it, if the toothpick comes out clean it is done.  If you bake these too long they will be dry.

We cut the Easter M&M Sugar Cookie Bars out with two different sizes of Easter Egg cookie cutters.

Decorate with The Best Buttercream Frosting

Let the cookie bars cool completely before you decorate them.  We used our super delicious Buttercream Frosting (recipe can be found here.)  We colored the frosting with pink, yellow, green and blue food coloring.

We decorated the top of the Easter M&M Sugar Cookie Bars the same way we would sugar cookies … let your imagination be your guide!

  1. Cream butter and sugar.
  2. Add eggs and vanilla and mix.
  3. Add dry ingredients, mix well.
  4. Add sprinkles and M&M's and mix.
  5. Spread on cookie sheet covered with parchment paper.
  6. Bake at 375 degrees for 10-15 min or until a toothpick comes out clean. Do not overbake!
  7. Cool.
  8. Cut out with Easter Egg Cookie Cutters.
  9. Decorate with Best Buttercream Frosting in pretty spring colors.
