Sometimes all it takes is a bit of creaming sweet but tart frosting to take a cookie from great to spectacular. That is certainly the case for our Christmas Meltaways with Cranberry Frosting.  These unique and tasty Christmas Cookies would be great for a potluck dinner, a Holiday bake sale, or a Christmas Cookie exchange. Enjoy!

How to Make the Cookies

Step 1: In a large bowl, cream butter, cornstarch, and powdered sugar until creamy.  Add in vanilla extract.  Add the flour and mix until combined.  Refrigerate dough for 2 hours.

Step 2: To keep the cookies similar in size I measured out 2 oz. of dough for each cookie on my food scale.
Step 3: I rolled the dough into a ball and pressed the ball down with the bottom of a measuring cup.

Step 4: Bake the cookies in a 350-degree oven for 10-12 minutes or until light brown around the edges.
Step 5: Allow the cookies to cool completely before frosting them.

Step 7: Frost the cookies. For a bit of extra Holiday-flair, we sprinkled the frosting with glittery Sparkling Sugar. That’s all there is to it!  So pretty … so Christmas-y.

Christmas Meltaways with Cranberry Frosting are a light and fluffy butter cookie topped with delicious Cranberry Frosting perfect for a Christmas Cookie Exchange.

Ingredients

  • 2 cups Butter, softened to Room Temperature (Sweet Cream Salted)
  • 1 cup Cornstarch
  • 1 cup Powdered Sugar
  • 1 teaspoon Vanilla Extract
  • 2 1/2 cups All-Purpose Flour
  • 1 batch of our The Best Cranberry Buttercream Frosting
  • Sparkling Sugar (optional)

Instructions

  1. In a large bowl, cream butter, cornstarch and powdered sugar until creamy.
  2. Mix in Vanilla extract.
  3. Add the flour and mix until combined.
  4. Refrigerate the dough for 2 hours.
  5. Roll dough into a ball and slightly flatten the ball with the bottom of a glass or measuring cup before baking.
  6. Bake in a 350 degree oven for 10-12 minutes.
  7. Frost with The Best Cranberry Buttercream Frosting
  8. Decorate with Sparking Sugar
