We’ve taken one of our most popular cookie recipes and dressed it up for the Holidays. These Christmas Carrot Cake Cookies are guaranteed to be a hit at your Holiday party or family gathering.  Moist and delicious and chocked full of carrot cake flavor, these cookies are topped with the Best Cream Cheese Frosting you’ve ever tasted. You better double the recipe because these cookies will disappear quickly!

Step 1: In a large bowl, cream the softened butter and the granulated and brown sugars until light and fluffy (approximately 2 minutes.)  Add the eggs and vanilla and mix for an additional 2 minutes.

Step 2: In a separate bowl, mix the flour, cinnamon, baking powder, baking soda, and salt. Mix well.
Step 3: Add the dry ingredients to the bowl and mix until just combined.

Step 4: Grate 2 cups of carrots.  We grated the carrots with a cheese grater this time. You could also use pre-grated carrots from the grocery store.  We used those before and they taste great in these cookies.
Step 5: Fold the grated carrots into the cookie dough. 

Baking Instructions

Step 6: Roll the dough into a ball and place them on a cookie sheet.  These cookies poof up a bit so we pressed down the cookie dough balls a bit before we baked them.
Step 7: Bake the cookies in a 375-degree oven for 13-15 minutes or until golden brown around the edges. Here is what the cookies look like just out of the oven. Golden brown and delicious and chock full of sweet delicious carrots.

Step 8: While the cookies are cooling, make a batch of our super delicious The Best Cream Cheese Frosting.  You can find the recipe and detailed instructions on how to make this frosting right here.

Decorating the Cookies

Step 9: Frost the Carrot Cake Cookies with the Best Cream Cheese Frosting using a spreader or a knife.
Step 10: For a bit of Christmas pizzazz we added these pretty Christmas Sprinkles around the edge of the Carrot Cake cookies. That’s all there is to it! You now have a yummy frosted Christmas cookie that tastes just like a piece of Carrot Cake but all dressed up for Christmas.  These cookies will be a hit at your Christmas potluck, Cookie Exchange, or family Holiday gathering!

Christmas Carrot Cake Cookies

Ingredients

  • 1 cup Butter, softened to room temperature (Sweet Cream Salted)
  • 1 cup Granulated Sugar
  • 1/2 cup Brown Sugar (packed)
  • 2 Large Eggs
  • 1 teaspoon Vanilla Extract
  • 3 cups All-Purpose Flour
  • 2 1/4 teaspoons Cinnamon
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 2 cups grated or chopped raw Carrots
  • 1 batch of our The Best Cream Cheese Frosting
  • Christmas Sprinkles (optional)

Instructions

  1. Grate and chop 2 cups Raw Carrots
  2. In a large bowl, cream butter and sugars until light and fluffy.
  3. Beat in eggs and vanilla.
  4. Mix in cinnamon, baking powder, baking sold and salt and mix well.
  5. Add flour and mix until combined.
  6. Add in 2 cups of carrots.
  7. Bake the cookies in a 375 degree oven for 13-15 minutes or until golden brown around the edges.
  8. Allow cookies to cool.
  9. Frost with The Best Cream Cheese Frosting.
  10. Decorate with Christmas Sprinkles.
