Springtime M&M Chocolate Chip Cookie Bars

This Springtime M&M Chocolate Chip Cookie Bar recipe is the one we grab when we need a yummy but really easy to make treat. You won’t have to spend hours in the kitchen baking a bunch of batches of cookies … just make the cookie dough, press it into a pan, bake and cut it into squares. Super Easy. Soft on the inside, crunchy on the outside and chock full of mini chocolate chips and pretty pastel M&M candies, this easy cookie bar will wow on the Easter dessert table or at your Spring Sunday Brunch. If someone asks you at the last minute to bring a dessert to Easter Brunch, this is the recipe for you. Happy Holidays from our family to yours!
Where to Find the Spring Pastel M&M’s

These cookie bars feature the special Easter Holiday M&M mix of M&M’s. You can find them in most grocery stores in the spring, usually from the end of February until after Easter. The colors are so pretty and we always buy an extra bag or two to use on other desserts throughout the year.
How to Make the Cookie Dough

Step 1: Add softened butter, sugar and brown sugar to a bowl. Cream with a mixer for 3 minutes.
Step 2: Add the Eggs and the Vanilla and continue mixing for 3 more minutes.
Step 3: Add the Baking Soda, Salt, Corn Starch and Flour. Mix the flour and other dry ingredients until they is completely incorporated in the cookie dough but do not over-mix.
Step 4: Add 1 cup Mini Chocolate Chips and 1 cup of the pastel M&M’s into the cookie dough.

Step 5: Fold together the cookie dough, the mini chocolate chips and the M&M’s until just combined.

Step 6: Line a 9×13” baking pan with parchment paper and spoon the cookie dough into the pan.
Step 7: Smooth out the cookie dough in the pan. We used a parchment paper on top to help with the process.
Step 8: Sprinkle an extra 1/4 cup of Mini Chocolate Chips and 1/4 cup of Pastel M&M’s on the top of the dough.
Step 9: Bake the cookies in an oven preheated to 350 degrees for 30-35 minutes or until the edges are golden brown.

Step 10: Cool, cut into squares, serve and enjoy!
Storage Instructions
These cookie bars should be stored in an airtight container. And they will stay fresh longer if they are completely cool before you pack them up. We usually add a layer of parchment paper between each row of bars in our plastic container. They will stay fresh at room temperature for 2-3 days if you store them correctly in an air-tight container. They will last up to 3 months in the freezer.

Ingredients
- 1 cup Softened Butter (Sweet Cream, Salted)
- 1/2 cup Granulated Sugar
- 1 cup Dark Brown Sugar
- 2 Large Eggs
- 2 teaspoons Vanilla Extract
- 1 teaspoon Baking Soda
- 1 teaspoon Corn Starch
- 1/2 teaspoon Salt
- 2 3/4 cups All-Purpose Flour
- 1 1/4 cups Nestle Mini Chocolate Chips
- 1 bag Easter Holiday Mix M&M's
Instructions
- Cream the softened butter, brown sugar and granulated sugar in a mixer for 3 minutes.
- Add the Eggs and the Vanilla and continue mixing for 3 more minutes.
- Add the Baking Soda, Salt and Corn Starch. Mix until just combined.
- Add the flour.
- Mix the flour until it is completely incorporated in the cookie dough but do not over-mix.
- Add 1 cup Mini Chocolate Chips and 1 cup of the Easter M&M’s and fold until just combined.
- Line a 9×13” baking pan with parchment paper and spoon the cookie dough into the pan.
- Smooth out the cookie dough.
- Sprinkle the extra 1/4 cup of Mini Chocolate Chips on the top of the dough.
- Sprinkle 1/4 cup of the Easter M&M’s on the top of the dough.
