These Pumpkin Spice Cake Bites combine Pumpkin cake and Pumpkin Spice Frosting in a unique take on a Fall or Thanksgiving dessert.

Sometimes you don’t have enough time to make a cake but a cupcake is too casual for the occasion .. . when that happens try a Cake Bite!  Same yummy cake and delicious frosting but in a fun mini cake style that always wows party guests. These gorgeous and delicious Pumpkin Spice Cake Bites are super easy to make and will be a guaranteed hit as a Thanksgiving dessert, a Fall treat, or just a random Sunday.

How to Make the Cake

Step 1: In a mixer cream the butter and sugar until light and fluffy. Add eggs and pumpkin and mix well.  Sift flour, baking powder, salt, and spices together and fold them into the batter.  Mix until well blended.

Step 2: Line a 12″ x 9″ Jelly Roll/Cookie Sheet with parchment paper and then spoon the batter into the cookie sheet. Use a spatula to spread the batter evenly on the cookie sheet.
Step 3: Bake in a 350-degree oven for approximately 15 minutes.  To check if the cake is done, poke a wooden toothpick in the cake, if it comes out clean the cake is done.

How to Make the Frosting

Decorating the Cake Bites

Step 5: Add a thin layer of frosting to the cooled Pumpkin Cake.
Step 6: Cut into bite-sized pieces.

Step 7: Top with a swirl of Whipped Cream.  One note about these Pumpkin Spice Cake Bites … if you are going to make these ahead of a party, store them in the refrigerator in an airtight container because unlike a cupcake that is protected by a cupcake liner, the sides of the cake bite are exposed and will dry out if left out too long.
