Our Peppermint Sugar Cookie Bars are chock full of Peppermint flavor, filled with pretty Christmas sprinkles, and topped with creamy homemade Peppermint Buttercream Frosting.

Peppermint lovers, this one is for you.  We’ve taken our yummy Sugar Cookie Bars recipe, added just the right amount of Peppermint flavor and since more is always better, we’ve topped them with our creamy minty Best Peppermint Buttercream Frosting.  Add some Christmas Sprinkles and you’ve got a Christmas Cookie Bar that even a peppermint connoisseur like Santa Claus will love.

Step 1: Add the softened butter and sugar to a mixing bowl.
Step 2: Cream the butter and sugar on medium speed until it was light and fluffy (approximately 2 minutes) and then add the Peppermint Extract and mix until combined.
Step 3: Add the vanilla extract and eggs and mix for an additional 2 minutes.
Step 4: Add the Baking Soda and the flour and mix just until the flour is combined with the dough.

Step 5: Add the Christmas Sprinkles to the dough and gently fold them into the dough.

Baking Instructions

Step 6: Cover a cookie sheet with parchment paper.  You can skip this step and grease the cookie sheet instead but the parchment paper will really help the edges of the cookies not get brown during the baking process. Pour all of the dough out onto the prepared cookie sheet.  
Step 7: Press the dough down onto the cookie sheet.
Step 8: We used a piece of parchment paper and a rolling pin to even out the layer.  You want the layer to be about 3/4″ thick. 
Step 9: Bake the Peppermint Sugar Cookie Bars in a 375-degree oven for 10-15 minutes.  Do not overbake the cookies.  It will not come out of the oven a golden brown – in fact, it might look a little un-done but it is not. Use a toothpick to test it, if the toothpick comes out clean it is done.  If you bake these too long they will be dry. Allow the cookie bars to completely cool.

How to Make the Peppermint Buttercream Frosting

Step 10: As the cookie bars are cooling, make a batch of our super yummy and Christmas-y The Best Peppermint Buttercream Frosting.  You can find the recipe and detailed instructions here

Putting It All Together

Steps 11-12: Frost the sugar cookie bars with the Peppermint Frosting.
Step 13: We add some more Christmas Sprinkles to the top of the cookie bars.
Step 14: Cut the Peppermint Sugar Cookie Bars into individual pieces. These Peppermint Sugar Cookie Bars are super delicious and chock full of yummy Peppermint flavor.  This one is a winner!

Peppermint Sugar Cookie Bars

Ingredients

  • 1 cup Butter, softened to room temperature (We used Sweet Cream Salted Butter)
  • 2 cups Granulated Sugar
  • 1 teaspoon Peppermint Extract
  • 4 large Eggs
  • 2 teaspoons Vanilla Extract
  • 1/2 teaspoon Baking Soda
  • 5 cups All-Purpose Flour
  • Christmas Jimmie Sprinkles
  • 1 batch of our Best Peppermint Buttercream Frosting

Instructions

  1. Cream butter and sugar.
  2. Add Peppermint Extract.
  3. Add eggs and vanilla and mix.
  4. Add dry ingredients, mix well.
  5. Add Sprinkle and mix by hand.
  6. Spread on cookie sheet covered with parchment paper.
  7. Bake at 375 degrees for 10-15 min or until a toothpick comes out clean. Do not overbake!
  8. Cool.
  9. Frost with our Best Peppermint Buttercream Frosting.
  10. Add Sprinkles to the top of the frosting.
