When we are putting together our Holiday Baking list we have two columns … Christmas Eve and Christmas Day.  For Christmas Day we have the cookies and the candies set out all day on the dessert table but for Christmas Eve we like something a little fancier, something we can serve after Christmas Eve dinner.  This Peppermint Marshmallow No-Bake Dessert is one of our favorite go-to Christmas Eve desserts. Light and airy with the perfect blend of peppermint, marshmallow, and chocolate. This one is mmmm ….. mmmm …. good and it is one of our most requested family desserts.  We hope your family enjoys it as much as our family does!

Step 3: Using your hands, work the butter into the Oreo crumbs until they are fully covered with the melted butter.
Step 4: Firmly press the Oreo crumbs into a 9×13″ glass pan. Refrigerate the crust while you make the Marshmallow mixture.

How to Make the Peppermint Marshmallow Filling

Step 5: Add the mini marshmallows, peppermint extract, and the milk to a microwave-safe bowl.  Melt the marshmallows in the microwave for 1 minute.  Take out the bowl and stir the marshmallows.  Put the bowl back in the microwave and melt for another 1 to 1 1/2 minutes.  Stir again.  The marshmallows should be completely melted.  Place the bowl in the refrigerator for 40 minutes so it can cool.  You need to check on the mixture a couple of times during that 40 minutes and give it a stir.  If you leave the mixture in the refrigerator for longer than 40 minutes the marshmallows will start to harden and the mixture will be ruined.  Set your timer to remind yourself to stir the mixture every 10 minutes.

Step 6: After the marshmallow mixture has cooled in the refrigerator for 40 minutes, fold the Cool Whip into the marshmallow mixture.
