If Nabisco can make Mint Oreos we can make Mint Oreo Buttercream Frosting! We went into the Two Sisters Test Kitchen and came out with the perfect blend of our Mint Buttercream Frosting and Oreo Buttercream Frostings.  Well, we didn’t really come out of the test kitchen with any of this yummy minty and chocolately frosting. That actually got gobbled up by our family but we had the recipe which we happily pass on to you.

Measure the Powdered Sugar

First step – measure 1 pound of Powdered Sugar.  (If you don’t have a food scale the equivalent would be 4 cups.)  You can sift the powdered sugar if it is really lumpy or mix the powdered sugar on low for 30 seconds to break up any large lumps.

Ingredients for Butter Rum Buttercream Frosting

Add 1 cup of softened butter to the mixing bowl with the powdered sugar.

Add in powdered sugar and mix on low

Start your mixer (or electric beater) on the lowest setting.  It is a good idea to wrap a dishtowel around your mixer to keep the sugar from flying out of the bowl.  Keep the mixer on low until the butter and sugar are incorporated and then kick your mixer up to medium high.

Add Milk to the bowl

Add 1 tablespoon of milk and mix.  Once fully incorporated, after a minute or so, stop the mixer and check the consistency and taste.  At this point the frosting may be a little dry.  Add another teaspoon of milk, mix and check again.

The Best Eggnog Buttercream Frosting

Now add 1/2  teaspoon of Peppermint Extract and mix until incorporated.  ALWAYS ALWAYS ALWAYS taste your frosting.   You are trying to determine if the consistency is wrong, if it needs more milk, more peppermint extract etc.

Mint Oreo Buttercream Frosting

You can leave the frosting white but it really doesn’t seem very Mint-y does it?  We added 2 drops of yellow and 1 small drop of blue to get this pretty mint green color.

Sifting out the Oreo crumbs

For the Oreos, after a lot of taste testing, we have found that the frosting tastes best if you remove the Oreo filling before you crush up the cookies.  You also need to crush your Oreo cookies on the coarse side.  You need the cookie crumbs to be small enough so you can use a decorating tip to frost your cupcakes but big enough that they are not just cookies crumbs. Sift out the cookie dust (it doesn’t look good in the frosting) and add 1/2 cup of the crumbs to the mint frosting.

Two Sisters Tip:  This is not a “make-ahead” frosting.  You need to frost your baked goods within a few hours of making this frosting. If you refrigerate the frosting and take it out to frost the next day, when you stir it up the cookie crumbs will blend into the frosting and turn the frosting into a green-ish/grey color.  However, it is fine to frost your cupcakes and then refrigerate the frosted cupcakes. It is the stirring after refrigerating that causes the problems.

How much Mint Oreo Buttercream Frosting will you need?

How much frosting will you need?  That always depends on how thick or thin you apply the frosting or how much decorating you do but here are a couple of guidelines. Our recipe should make enough Mint Oreo Buttercream Frosting to cover a 9″ x 13″ sheet cake or a two-layer 8″ cake.  If you are making cupcakes, you should be able to frost 24 cupcakes if you apply the frosting with a knife.  If you swirl on the frosting with a pastry bag you should be able to frost 15-18 cupcakes depending on the size of the swirl.

Mint Oreo Buttercream Frosting

Instructions

  1. Add powdered sugar to mixing bowl.
  2. Add softened sticks of butter
  3. Add 1 tbsp of milk.
  4. Beat on low until powdered sugar is incorporated. Then move mixer up to medium-high speed. Scrape sides and bottom of bowl often. When completely mixed the frosting may appear dry.
  5. Add more milk, a little bit at a time until frosting is the proper consistency.
  6. Add Peppermint Extract.
  7. Add Food Coloring.
  8. Coarsely chop Oreo Cookies (with or without filling) and sift out small crumbs.
  9. Add Oreo Cookie pieces.
