To make the Cheese filling, add the cream cheese and sour cream in a mixing bowl and beat until smooth.  Now add in grated cheese, garlic powder, onion powder, and pepper. Stir together until completely mixed.

How to Add the Toppings

Take a spoonful of the cheese filling and roll it into a ball. Place on a cookie sheet or platter. Put the cheese bites in the refrigerator and chill for at least 60 minutes.  While the cheese balls are in the refrigerator, finely chop your toppings. We used Chives, Dried Cranberries, and Everything Bagel seasoning mixed with Sesame Seeds but you can use anything your imagination comes up with.  Other topping ideas would be bacon bits, nuts, sesame seeds, other dried fruits or crushed crackers.  Take the cheese bites out of the refrigerator. Place the cheese ball into the topping and use a spoon or your fingers to press the toppings onto the cheese ball.
