Looking for a fun Easter or Spring dessert that your family will love? How about Celebration Marshmallow Pops? Easy to make and super delicious, they are a homemade candy bar on a stick, and who doesn’t love marshmallow and chocolate?  What a great Easter treat or a fun dessert for a Spring party.  And did we already say how yummy they are?  Give them a try, you won’t be sorry!

Ingredients You Will Need

All the ingredients necessary to make Celebration Marshmallow Pops including marshmallows, lollipop sticks, white chocolate melting wafters and pastel colored candy melts.

How to Prepare the Marshmallows

Step 1:  Marshmallows are like snowflakes … no two are the same, so you want to make sure you have like ones together. Sort through the bag of marshmallows and match them up in sets of threes.  Then place three matching marshmallows on the lollipop stick.  For the third (top) marshmallow, only press the marshmallow halfway down onto the stick.  You do not want the stick to come out the top of the third marshmallow or the marshmallow will dry out.

How to Prepare the White Chocolate

Step 2: After getting all the marshmallows on the sticks, prepare your chocolate for melting.  We used a long shallow pan to melt the chocolate.  We put about 20-25 white chocolate melting wafers in the pan and microwaved them for 30 seconds, checked them, gave them a stir, and then microwaved them for 10 seconds more. Stirred and then microwaved them for another 10 seconds.
Step 3: Once they were almost completely melted we took them out gave them a final stir.  This amount of chocolate-covered 2 to 3 wands.

How to cover the Celebration Marshmallow Pops in Chocolate

Step 4: Roll the marshmallows on the stick in the melted chocolate. If you have problems rolling the marshmallows in the chocolate, have a spoon handy and you can spoon the chocolate over the marshmallows and smooth out the chocolate on the marshmallows. Don’t forget to dip the top of the marshmallow into chocolate. Once the marshmallow pop is completely covered with chocolate, lightly tap the stick on the edge of the plate to get the excess chocolate off.  Give it a once over to make sure it is all covered and place it on a piece of parchment paper.  This will leave a “flat side” on the marshmallow, so if you want it rounded on all sides you will have to let them dry standing up and for that, you will need a form brick to put the sticks into. 

How to Decorate the Marshmallow Pops

Step 5: You can use candy melts to decorate the Marshmallow Pops. Candy melts can be found in the Cake Decorating section in most Craft Supply stores, Amazon, and Walmart. We used Green and White Candy Melts.
Step 6: While the chocolate on the marshmallow pops is drying, melt 15-20 each of different colored candy melts in individual Ziploc bags in the microwave. Microwave them in 20-second intervals, massage the baggies to make sure the candy melt mixture is melting, and then microwave again if needed.   

We melted the candy melts in the following amounts:

Pink Drizzle – 20 Bright Pink Candy Melts
Blue Drizzle – 20 Blue Candy Melts
Yellow Drizzle – 5 Bright White +  15 Yellow Candy Melts
Purple Drizzle – 16 Bright Pink Candy Melts with 10 Blue Candy Melts

Step 7: Once melted, we cut the tip off the bag and drizzled the candy over the marshmallow pops.  Make sure you only cut the very very tip of the bag. You only want a small hole to give yourself more control over the drizzle. Alternating colors, drizzle the melted candy melts over the Celebration Marshmallow Pops. We started with Yellow.
Step 8: Add a Pink candy melt drizzle.
Step 9: Add a Blue candy melt drizzle.
Step 10: Finish with the purple candy melt drizzle.

Step 11: Allow the Celebration Marshmallow Pops to harden completely before serving. They look so pretty with the drizzled Candy Melt mixture!

Expert Tips and FAQS

What type of chocolate should I use?

We tried both melting chocolate and white chocolate chips to coat the marshmallows and found the melting chocolate much easier to use.  It melted into a thinner consistency so covering the marshmallows was easier.  The white chocolate chips were a little clumpy and made a much thicker coating of chocolate.  As for taste, there was no difference.  They were both delicious.

How many marshmallow pops can I make at one time?

It is best to work with 1/2 cup of chocolate melting wafers at a time otherwise the melted chocolate will start to harden and it is too hard to cover the marshmallows.

How to get the best candy melt drizzle.

Make sure you only cut the very very tip of the plastic bag when you are decorating the marshmallow pops. You only want a small hole to give yourself more control over the drizzle.

How should I store leftovers?

Marshmallow Pops will last for a couple of weeks if you store them in an airtight container. And there is no need to keep them in the refrigerator, in fact, the chocolate might discolor if you do store them in the refrigerator.

Ingredients

  • 24 Regular sized Marshmallows
  • 1 cup Ghirardelli White Chocolate Melting Wafers or White Chocolate Chips
  • Wilton Candy Melts - Yellow, Blue, Bright Pink, Bright White
  • 8 Lollipop Sticks

Instructions

  1. For each Marshmallow Pop, find 3 marshmallows that are approximately the same size and skewer them with a lollipop stick.
  2. Place 20-25 white chocolate wafers in the pan and microwave them for 30 seconds, check them, give them a stir and then microwave again for 10 seconds more. Repeat process until chocolate is almost completely melted.
  3. Use a spoon to help cover the marshmallows and also to smooth out the chocolate once it was on the marshmallows.
  4. Allow the marshmallow pops to cool and the chocolate to harden.
  5. Melt 15-20 Wilton Yellow, Blue and Bright Pink Candy Melts in individual Ziploc bags.
  6. Once melted, cut the tip off the bags.
  7. Alternating colors, drizzle the melted candy melts over the Marshmallow Pops.
  8. Allow the drizzle on the Marshmallow Pops to harden before storing in an air-tight container.
