In our family, Yellow Cake with Chocolate Frosting is the go-to-favorite Birthday Cake. So of course we love these super easy-to-make Birthday Cake Mix Cookies that taste just like the delicious traditional yellow cake and chocolate frosting Birthday Cake. Using only a handful of ingredients and a small amount of time in the kitchen you’ll have a batch of cake mix cookies that are fluffy and moist and taste just like yellow cake batter. Once you top them with our homemade creamy and delicious chocolate frosting you have a cookie that your family will beg you to make even when it is nobody’s birthday! And if it is somebody you love’s birthday, grab a candle because these cookies will be the star of their party!

Ingredients You Will Need

All the ingredients you will need to make Birthday Cake Mix Cookies including butter, eggs, yellow cake mix, vanilla pudding mix, sprinkles, powdered sugar, cocoa power and vanilla extract.

Step 1:  This cookie dough could not be easier to make.  Add the packages of cake mix, the packages of vanilla pudding mix, the melted butter, and the eggs to a mixing bowl.  Mix on medium speed just until the ingredients are combined. Add the sprinkles, mix quickly only enough to disperse the sprinkles throughout the cookie dough, you don’t want to overmix this dough. Easy peasy, you’ll be done in less than 5 minutes.  Refrigerate the dough overnight or for at least one hour.

Baking Instructions

Step 2:  Using an ice cream scooper (ours measures approximately 2.5 oz of cookie dough), scoop out the cold cookie dough and place it on a prepared cookie sheet lined with parchment paper.
Step 3:  Bake the cookies in an oven preheated to 350 degrees for 12-13 minutes.  The cookies are done when they are just slightly brown along the bottom edges of the cookie.  (You don’t want the cookies to brown too much on the top.)  Cool the cookies completely before you frost them.

Putting It All Together

Step 5: Frost the Cake Mix Cookies with the chocolate frost, just as you would a yellow birthday cake.  For a little extra razzle-dazzle, we added more sprinkles around the edge of the chocolate frosting. Your cookies are now ready for the Birthday Boy or Girl!

Expert Tips and FAQs

How long will the cookies last?

Cookies should always be stored in an airtight container.  They should be completely cooled before storing them.   Because these are frosted cookies, we usually add a layer of parchment paper between each row of cookies in our plastic container.  Cookies stored at room temperature should stay fresh for 3-4 days.  You can also keep them in the refrigerator and that extends their freshness for up to a week. If you need them to last longer, you can freeze them for up to 3 months.  You can pull them out of the freezer and leave them on the counter for 1 hour and they will be ready to eat. 

What kind of Cake Mix Should I Use?

It doesn’t matter which brand you use but this particular recipe calls for Yellow Cake Mix.

What type of sprinkles should I use?

We recommend a Jimmie Sprinkle for these cookies, nonpareils would not be a good option.

Yellow Cake Mix Cookies

  • 2 boxes Yellow Cake Mix
  • 2 boxes Vanilla Pudding Mix (3.4 oz.)
  • 1 cup Melted Butter (Sweet Cream, Salted)
  • 4 Large Eggs
  • 1/3 cup Jimmies Sprinkles

Chocolate Buttercream Frosting

  • 1 cup Butter, softened (we use Salted, Sweet Cream Butter)
  • 4 cups Powdered Sugar
  • ¾ cup Cocoa Powder
  • 2-3 teaspoons Vanilla Extract
  • 1-2 tablespoons Milk

Instructions
