My husband loves Pecan Pies and I like to make them for him. But pies can be … what’s the right word … complicated. So we came up with these Pecan Pie Bars. All the same yummy flavors of a Pecan Pie in cookie bar form. If you are looking for the sweet and creamy filling, the crunchy pecan topping, and the flaky crust without the rolling pins and pie pans we have you covered. Big thumbs up from the husband and they are the perfect easy dessert for a Fall potluck or Thanksgiving. We hope you enjoy it as much as he did.

Step 1: Add flour, sugars, salt, and cold butter that has been cut into slices or cubes into a mixing bowl. Mix until combined with a fork or a pastry cutter. (The mixture will be dry.)
Step 2: Press the mixture evenly into a lined 9×13″ baking pan. (Lining the pan with parchment paper will make it easier to remove the bars).
Step 3: Bake the crust in an oven preheated to 350 degrees for 15-18 minutes or until the edges are golden brown.

How to Make the Pecan Filing

Step 3: While the crust is baking, make the pecan filling.  In a large bowl combine sugar, corn syrup, eggs, and vanilla and mix until combined.
Step 4: Add in flour and salt and mix again.
Step 5: Add the chopped pecans.
Step 6: Stir until pecans are thoroughly mixed with the batter.

Baking Instructions

Step 7: When the edges of the crust are golden brown, remove the pan from the oven and pour the pecan mixture onto the hot crust.
Step 8: Return to the oven and bake for 25 minutes. Cool and cut into bars.

How to Store/Freeze the Pecan Cookie Bars

Store the Pecan Bars in the refrigerator in the pan covered with aluminum foil or plastic wrap if you are going to eat them in 2-3 days. If you want to keep them longer than that, you should freeze them. To freeze them, store them in an airtight container and separate each layer of bars with a piece of parchment paper.

Our Pecan Pie Bars are everything that is yummy about a Pecan Pie (sweet and creamy filling, crunchy pecan topping and flaky crust) in an easy to make cookie bar recipe.

Ingredients

Shortbread Crust

  • 1 cup Butter (Sweet Cream Salted Butter, Cold and cubed)
  • 1/4 cup Brown Sugar (packed)
  • 1/4 cup Granulated Sugar
  • 2 cups All-Purpose Flour
  • 1/4 teaspoons Salt

Pecan Filling

  • 1 cup Light Brown Sugar
  • 1 1/2 cups Corn Syrup
  • 4 Large Eggs
  • 1 tablespoon Vanilla Extract
  • 1/3 cup All-Purpose Flour
  • 1 teaspoon Salt
  • 2 cups Pecans (chopped)
