Christmas Sugar Cookie Sandwiches are a fun take on sugar cookies with frosting and will be a hit at your Christmas party or potluck.

I hesitate to admit this, but I have a weird online shopping addiction.  I like to shop for things, put them in the cart and then never buy them.  I always start off with the best intentions and then something happens and I never follow through.  Anyway, on one such online shopping excursion, I came across a sandwich cookie pan from Wilton.  I thought it would be so fun and versatile, so this time I put it in the cart, and bought it.  These cookies turned out exactly as we had hoped.  Once we figured out how much cookie dough to use for each cookie, it was a piece of cake…err cookie to make.

How to Make the Sugar Cookies

Step 1: We made a half batch of our yummy and easy to make Sugar Cookie Recipe to make our Sandwich cookies. You can find the recipe and detailed instructions on how to make the dough here.
Step 2: Then we colored the dough with Americolor Super Red and Americolor Leaf Green food coloring.

Step 3: Press a small ball of cookie dough down into a Wilton Cookie Sandwich Pan (which you can find on Amazon). You don’t want to fill the mold all the way to the top or you will have a sharp edge around the cookie.
Step 4: Bake the cookies in a 350-degree oven for 5-6 minutes.  You should do a test batch with just a couple of cookies first to get the timing right.  If you leave them in too long the bottom of the cookies gets slightly brown and the Sugar Cookie Sandwiches don’t look as pretty.  In our oven, 5 minutes was the right amount of time.

How to Make the Buttercream Frosting

Step 5: While the cookies are cooling, make up a batch of our Best Buttercream Frosting Recipe.  You can find our recipe for buttercream frosting here.

Putting It All Together

Step 6: Load up a pastry bag (or a plastic sandwich bag) with the buttercream frosting and pipe on a circle of buttercream frosting. You don’t want too much or the frosting will smush out of the cookie when you eat it.
Step 7: Add a second cookie and your Christmas Sugar Cookie Sandwiches are ready to eat! These cookies are so fun and festive and taste great.  We love to find new ways to use sugar cookies and frosting and this one is a keeper!
