Our Pumpkin Mini Cakes were a surprise hit.  Although maybe we shouldn’t have been surprised.  Mini Cakes are a fun twist on a classic cupcake and are super easy to make.  Replace the pumpkin with lemon and you have a brand new go-to dessert … Lemon Mini Cakes with Lemon Buttercream Frosting.  Try them at your next office birthday party or neighborhood pot-luck!

How to Make the Mini Cakes

Step 1: Our Lemon Mini Cakes start with a box of white cake mix and a lemon.  We used Betty Crocker Super Moist Cake Mix but any white cake mix will do. You will need 1/4 cup of lemon juice and 2 heaping teaspoons of lemon zest.
Step 2: Make up the cake mix according to the directions on the box and replace 1/4 cup of the water with the lemon juice and lemon zest.  For example, the Betty Crocker cake mix we used calls for 1 1/4 cup of water.  We used 1/4 cup of lemon juice and then as we always do to punch up a cake mix we used 1 cup of milk instead of the other cup of water.  And don’t forget to add the lemon zest when you are done mixing the batter.  We also added 1 small drop of yellow food coloring to get a more lemon-y look to the mini cakes.

Step 3: Pour the batter into a Wilton Whoopie Pie Pan.
Step 4: Bake in a 350 degree oven for 8-10 minutes. When they are done, the tops of the Lemon Mini Cakes will spring back when you lightly press down on them.

Make a Batch of our Lemon Buttercream Frosting

Step 5: While the Mini Cakes cool, make a batch of our delicious The Best Lemon Buttercream Frosting.  Light and creamy with just the right amount of lemon flavor, you’ll find detailed instructions on how to make this yummy frosting right here. We did not add any yellow food coloring to our frosting so that the frosting would contrast nicely with the lemon Mini Cakes!
Step 6: Using a Wilton 2D decorating tip we swirled on the Lemon Buttercream Frosting in a rosette pattern. This is easy to do with this particular tip. Just start in the center and swirl the frosting in circles until you get to the outside of the cupcake top.  You can see a video of how to do this on our Five Ways to Decorate a Cupcake post.

Ingredients

  • 1 box Betty Crocker Super Moist White Cake Mix
  • 1/2 cup Oil
  • 3 Large Eggs
  • 1 cup Milk
  • 1/4 cup Lemon Juice
  • 2 teaspoons Lemon Zest
  • 1 drop Yellow Food Coloring
  • 1 batch of our The Best Lemon Buttercream Frosting

Instructions

  1. Juice and zest a large lemon.
  2. Make up the white cake mix according to the directions on the box and replace 1/4 cup of the called-for water with the lemon juice and zest.
  3. Added 1 small drop of yellow food coloring to get a more lemony look to the mini cakes. (Optional)
  4. Pour the batter into a Wilton Whoopie Pie Pan.
  5. Bake in a 350-degree oven for 8-10 minutes.
  6. Cool Mini Cakes.
  7. Frost with our The Best Lemon Buttercream Frosting.
