Chocolate Mint is a super yummy flavor combination and it doesn’t have just be for ice cream. This sweet and salty popcorn covered in minty marshmallow and tossed with chocolate chips will be a big hit with your family. It is both fun and delicious, a great combination! Chocolate Mint Popcorn is a fun anytime snack that would also be a great treat for Family Movie Night.

Popcorn for Chocolate Mint Popcorn

Start with approximately 10 cups of popcorn. Make sure you get out all of the un-popped kernels.  You don’t want to bite down on one of those!  We pop our popcorn on the stove (you can find our directions on How to Make Perfect Popcorn here) but you can use air-popped or microwave.  Once you have the popcorn made, salt it liberally.  It is so nice to taste the salty with the sweet marshmallow coating.  Not quite like Kettle Corn but close.

Marshmallow Mixture for the Easter Candy Popcorn

To make the Marshmallow Mixture for the Chocolate Mint Popcorn, melt 3 tablespoons of butter in a medium sauce pan.  Once the butter is melted, add 3 cups of mini marshmallows. Stir until the marshmallows are melted.  Turn off the heat as soon as the last marshmallow has melted.  Stir in 1/2 tsp. of Peppermint Extract.

Tint the Marshmallow mixture green

To tint the marshmallow mixture, we added 2 drops of Yellow and 1 small drop of Blue food coloring from the Wilton Color Right Food Coloring system.

Add Marshmallow Mixture to the Popcorn

Slowly pour the marshmallow mixture over the salted popcorn.

Mix the mint marshmallow mixture with the popcorn

Gently fold the marshmallow mixture in with the popcorn until the popcorn is mostly covered. The amount of marshmallow mixture you want to add is really up to your own taste.  The more you add, the stickier the popcorn will be so we suggest that you add it a bit at a time, stir the popcorn and give it a taste before you add more.  Leave a little bit of the marshmallow mixture for the next step.

Pour the popcorn out onto a cookie sheet

Now pour the popcorn onto a cookie sheet covered with foil or a silpat liner.  Drizzle a little bit of the remaining marshmallow mixture over the popcorn but do not mix it up. You will need the mixture at the top so chocolate will have something to stick to.

Chocolate chips for the Chocolate Mint Popcorn

Here are the mix-ins that we added to our Chocolate Mint Popcorn.  We used a handful of Nestle Chocolate Chunks and a handful of Nestle Mini Chocolate Chips.

Now it is time to add the chocolate candy.  Don’t wait too long after you pour the popcorn onto the cookie sheet. You want the marshmallow mixture to still be warm and sticky. Sprinkle the chocolate chips onto the popcorn, concentrating on the areas with the most drizzled marshmallow mixture.  Allow the Chocolate Mint Popcorn to cool. Break apart into pieces and serve.

Our family loves this popcorn so it has never lasted longer than a day at our house.  This popcorn definitely tastes best right after it is made but will keep for a few days in an airtight container. The popcorn is a little chewier the next day because it absorbs some of the moisture from the marshmallow mixture but it still tastes good.

Chocolate Mint Popcorn

  1. Pop 10 cups of popcorn and salt liberally and place in a large bowl.
  2.  Melt 3 tablespoons of butter in a medium sauce pan. Once the butter is melted, add 3 cups of mini marshmallows. Stir until the marshmallows are melted. Stir in 1/2 tsp. of Peppermint Extract. Turn off the heat as soon as the last marshmallow has melted.
  3. Add Green Food Coloring.
  4. Pour 3/4 of the marshmallow mixture over the popcorn in the bowl and then gently fold the popcorn with a spoon until most of the kernels are covered in mixture.
  5. Pour the marshmallow popcorn onto a prepared cookie sheet.
  6. Drizzle the remaining marshmallow mixture over the popcorn on the cookie sheet.
  7. Sprinkle the chocolate candy over the popcorn.
  8. Allow the popcorn to cool. Break apart into pieces and serve.
