Two Sisters to the rescue … introducing our Chocolate Chip Cookie Recipe for One. Perfectly portioned for when the cravings hit, these cookies have everything you love about the classic cookie—golden crispy edges, soft and chewy centers, and tons of melty chocolate in every bite without the time commitment and big mess in the kitchen.  We took our traditional cookie recipe into the test kitchen and worked on it until it was perfectly simple. Our requirements? One bowl, no mixer, minimal measuring cups and only ingredients normally found in the pantry.  Whether you are hankering for a quiet evening snack or a quick pick-me-up, these small batch chocolate chip cookies are here to remind you why homemade always tastes best.

How to Make the Cookie Dough

Step 1: Add “very” soft butter to a small mixing bowl (a large cereal bowl will be big enough.) You can soften the butter in the microwave. It needs to be soft and pliable but not fully melted. It should be the consistency of butter left out over-night. We microwaved the butter 10 seconds at a time, checking before another round. The soft butter makes it easier to mix the butter with the sugars without a mixer.
Steps 2-3: Add the granulated sugar and the brown sugar to the bowl and mix the sugars with the butter with a spoon until it is fully combined.

Steps 4-5: Add the egg yolk and the vanilla extract and continue mixing with a spoon until it is light and fluffy.

Step 6: Add the salt and baking soda, stir until combined.
Steps 7-8: Add the flour and stir only until the flour is mixed with the rest of the cookie dough.

Steps 9-10: Add the chocolate chips and fold together.

Baking Instructions

Separate the dough into two or three balls depending on how many and how big you want your cookies to be.  (We made two bakery style sized cookies.) Place the dough balls on a cookie sheet and bake for approximately 10 minutes in an oven that has been preheated to 360 degrees. The cookies will be golden brown around the edges when they are done. If you like your cookie a little gooey in the center, check it starting at the 7-8 minute mark.

  • Pinch of Salt
  • 1/2 cup PLUS 1 tablespoon All-Purpose Flour
  • 1/2 cup Semi-Sweet Chocolate Chips
