Peppermint Candy lovers this Christmas Cookie is for you!  A light and buttery cookie with a hint of Peppermint is topped with creamy Peppermint Buttercream Frosting. This cookie gets Two Sisters’ thumbs way up. Make a batch of these Peppermint Cookies with Peppermint Frosting for a Christmas potluck, a Holiday bake sale, or a Christmas Cookie exchange, and wait for the compliments to roll in!

How to Make the Cookies

Step 1: In a large bowl, cream butter, cornstarch, and powdered sugar until creamy.  Add in the peppermint extract.  Add the flour and mix until combined.

Step 2: To keep the cookies similar in size we measured out 2 oz. of dough for each cookie on a food scale and rolled the dough into a ball.
Step 3: We pressed the ball down on the cookie sheet with the bottom of a floured drinking glass.
Step 4: Bake the cookies in a 350-degree oven for 10-12 minutes or until light brown around the edges.

Putting it All Together

Step 7: Crush a handful of Peppermint Candies.  I placed them in a plastic bag and crushed them with a small hammer.
Steps 8-9: Frost the cookies. For a bit of extra Christmas-time flair, we pressed a row of crushed Peppermint Candies around the edge of the frosted cookie! Yum.

Ingredients

  • 1 cup Butter, softened to room temperature (Sweet Cream Salted)
  • 3/4 cup Cornstarch
  • 3/4 cup Powdered Sugar
  • 1/2 teaspoon Peppermint Extract
  • 1 cup All-Purpose Flour
  • Peppermint Candies
  • 1 batch of our The Best Peppermint Buttercream Frosting

Instructions

  1. In a large bowl, cream butter, cornstarch and powdered sugar until creamy.
  2. Mix in peppermint extract.
  3. Add the flour and mix until combined.
  4. Roll dough into a ball and slightly flatten the ball with the bottom of a glass or measuring cup before baking.
  5. Bake in a 350 degree oven for 10-12 minutes.
  6. Frost with The Best Peppermint Buttercream Frosting
  7. Decorate the cookies with Crushed Peppermint Candies
