Christmas Mini Bundt Cakes
Christmas Mini Bundt Cakes are a fun Holiday Dessert – a deliciously moist bundt cake with a cinnamon filling that is always a crowd favorite at a party.
Christmas Morning Coffee Cake is a family favorite of ours. We have had it every Christmas for as long as I can remember. Last year we did a post on the coffee cake, but this year we decided to shake it up a little. We found a mini Bundt pan and made Christmas Mini Bundt Cakes. We weren’t sure if they would turn out as good as the original, but they sure did. Not only will they look great on our Christmas dessert table, but they are perfect for giving out to our friends and family as a small Christmas gift.
How to Make the Cake Batter
Step 1: Start by making the cake batter. We have included the ingredients in the recipe card below but you can find all the step-by-step directions on our post for Christmas Morning Coffee Cake.
How to Make the Cinnamon Sugar Filling
Step 2: In a separate bowl, mix together the granulated sugar, chopped nuts, and cinnamon. We used pecans here but sometimes we use walnuts. Both taste equally good.
Baking Instructions
Step 3: We baked our Mini Sherry Cakes in a Mini Bundt pan. You want to grease the pan with shortening prior to filling it with cake batter.
Step 4: Partially fill the bundt pans – we filled them about half the way up.
Step 5: Sprinkle in some sugar and nut filling and then cover the filling with more cake batter.
Step 6: We baked our Mini Sherry Cakes for 20 minutes in a 350-degree oven. Allow the cakes to cool completely.
How to Make the Icing
Step 7: Make up a batch of icing to drizzle on the cakes. In a bowl mix the powdered sugar, milk, and vanilla. Mix until the right consistency.
Decorating the Mini Bundt Cakes for Christmas
Step 8: Drizzle the icing over the cakes.
Step 9: To add a bit of Holiday pizzazz, we added a Holly Berry made out of Red M&M’s and a green Jelly Slice candy that we cut in half to form the holly leaves.

Ingredients
Christmas Morning Coffee Cake:
- 1 package Yellow Cake Mix
- 1 large Package Vanilla Pudding
- ¾ cups Oil
- ¾ cups Sherry
- 2 teaspoons Vanilla
- 4 large Eggs
- 1 tablespoon Butter (Salted)
- ½ cup Granulated Sugar
- 1 tablespoon Cinnamon
- ½ cup Chopped Nuts (Pecans or Walnuts)
- Mini Bundt Pan
Icing:
- 4 cups Powdered Sugar
- 5 tablespoons Milk
- 2 tablespoons Vanilla
Decoration:
- Red M&M's
- Green Jelly Slices Candy
Instructions
- Combine cake mix, pudding, oil, eggs, sherry and butter in a mixing bowl.
- Beat mixture for 7 minutes.
- Mix sugar, cinnamon and nuts in a separate bowl.
- Pour half of the cake batter into a greased mini bundt pans.
- Sprinkle nut mixture on top of cake batter.
- Pour on the remaining batter.
- Bake at 350 degrees for 20 minutes.
- Sprinkle top with powdered sugar.
- Mix Powdered Sugar, Milk and Vanilla to make icing.
- Drizzle icing over Mini Bundt Cakes.
- Decorate with a Holly Berry made out of Red M&M's and a green Jelly Slice candy that we cut in half to form the holly leaves.

What liquid can I use in lieu of sherry
I would replace the Sherry with Milk.
Can you freeze these cakes unfrosted and decorate when defrosted?
Sure, that will work.
oh my I am sorry, I read after that I can replace the sherry with milk.Â
However, the pudding, is it instant?
Yes, Instant Pudding.
If the Sherry is omitted what would I replace it with?
If I add 1/4 cup of rum what would I use to make up for the rest of the liquid (1/2cup) since you added 3/4 cup of Sherry I’m guessing that liquid would need to be replaced so the batter is the correct consistencyÂ
Yes, I would replace the Sherry you don’t use with milk. That should make sure the consistency of the batter is correct.

I see vanilla listed twice. Do you use 2 tsp in the cake mixture too? I didn’t see that mentioned but I see vanilla listed twice on the list of ingredients. Sure hope so, because I am making now. Thanks in advance.

I have a wilton pan that has 12 fluted cavity. Did you use the 12 or the 6 ?
