Our Harvest Marble Sugar Cookie Bars are a unique take on a Frosted Sugar Cookie in gorgeous fall colors and topped with yummy buttercream frosting – perfect for Fall.

Sugar Cookie Bars are one of our favorite desserts.  We have made them a couple of times for the blog.  This time we did something special and used food coloring to make a pretty marble cookie bar.  Wow, do they look pretty!  And as always, they taste amazing.  This is a great dessert idea for Thanksgiving dessert or a Fall Bake sale.

How to Make

Step 1: Mix softened butter and sugar in a mixing bowl until fluffy. Add vanilla and eggs and mix. Add dry ingredients.  (P.S. if you are someone who likes the taste of cookie dough and isn’t afraid of raw eggs, this dough tastes AMAZING!!!)

Step 2: Separate the dough into five equal portions. We used a food scale but you can eyeball it if you don’t have one of those.
Step 3: Leave one portion of the dough white and color the other four. We created four pretty fall colors – Red, Orange, Gold, and Sage using our Wilton Color Right Food Coloring System in the following combinations:

Sage – – 6 drops of Yellow, 2 drops of Blue, 1 drop of Orange, and 1 drop of Brown
Orange – 6 drops of Orange, 3 drops of Yellow, and 1 drop of Red
Red – 6 drops of Crimson
Gold – 6 drops of Yellow and 3 drops of Blue and 2 small drops of Orange.

Step 4: Line a cookie sheet with parchment paper.  Take the white dough, break it up into small pieces and drop it randomly onto the cookie sheet.

Steps 5-8: Now do the same thing with the Red, Orange, Sage, and Gold cookie dough.

Step 9: Press the dough down into the cookie sheet.  You want the dough to be about 3/4″ high.  If it doesn’t fill the entire cookie sheet … don’t worry about it. It will still bake up fine.

Step 10: Place another piece of parchment paper over the cookie dough and press the dough down into the cookie sheet.
Step 11: This is what it will look like when you are done.
Step 12: Bake the Harvest Marble Sugar Cookie Bars in a 375-degree oven for 10-15 minutes.  Do not overbake the cookies.  It will not come out of the oven a deep golden brown – in fact, it might look a little un-done but it is not.  Use a toothpick to test it, if the toothpick comes out clean it is done.  If you bake these too long they will be dry. Let the cookie bars cool completely before you frost them.

Step 13: While the cookies are cooling, make a batch of our delicious The Best Buttercream Frosting. (The recipe and detailed instructions can be found here.)
Step 14:  Frost the cookie bard and then cut them into individual pieces. 
Step 15: Finally we added fall sprinkles on the frosting – don’t they look pretty?  No two are alike! These Harvest Marble Sugar Cookie Bars are super delicious and a unique take on the traditional frosted sugar cookie.

  • 1 cup Butter, softened to Room Temperature
  • 2 cups Granulated Sugar
  • 4 Large Eggs
  • 2 teaspoons Vanilla Extract
  • 5 cups All-Purpose Flour
  • 1/2 teaspoon Baking Soda
  • 1 batch of our The Best Buttercream Frosting

Instructions

  1. Cream butter and sugar.
  2. Add eggs and vanilla and mix.
  3. Add dry ingredients, mix well.
  4. Separate the dough into five equal portions.
  5. Leave one portion of the dough white and color the other four. We created four pretty fall colors - Red, Orange, Gold and Sage using our Wilton Color Right Food Coloring System
  6. Line a cookie sheet with parchment paper. Take the white dough, break it up into small pieces and drop it randomly onto the cookie sheet.
  7. Now do the same thing with the Red, Orange, Sage and Gold cookie dough.
  8. Place another piece of parchment paper over the cookie dough and press the dough down into the cookie sheet. Get it as even as possible. You want the dough to be about 3/4″ high.
  9. Bake at 375 degrees for 10-15 min or until a toothpick comes out clean. Do not overbake!
  10. Cool.
  11. Frost with our Best Buttercream Frosting
  12. Add Fall Sprinkles
