For us, a holiday just isn’t a holiday unless there are Rice Krispie Treats on the dessert table.  We keep wondering if we are going to run out of fun ways to transform Rice Krispie Treats into festive Christmas-themed goodies.  I guess this year isn’t that year … introducing Christmas Rice Krispie Treat Bites!  Yummy, bite-sized balls of crunchy, marshmallow-y delight.  Easy to make and even better to eat.  They are so pretty and colorful and festive and will look great on your Christmas dessert table or would be great to take to a school or office Holiday Party.  Merry Christmas everyone!

How to Make the Rice Krispie Treat Mixture

Step 1: The base for our Christmas Rice Krispie Treats Bites is our Best Ever Rice Krispie Treat Recipe which we have adjusted and perfected over the years until it is now absolutely the best Rice Krispie Treat recipe we have ever tasted.  You can find all the directions you’ll need to make these delicious treats right here.

How to Color the Rice Krispie Mixture

Step 2:  We made our Christmas Rice Krispie Bites in three different Christmas colors … Red, Green, and White (not shown above.)  You will need to make three different batches of Rice Krispie Treats, one for each color. For each color of Rice Krispie Treat Bite make a 3 cup batch of Rice Krispie Treat mixture (3 Tbsp. Butter/3 Cups Marshmallows/3 Cups Cereal).  Add the food coloring BEFORE you add the Rice Krispie Cereal.

Here are the Food Coloring Formulas we used: 

White:  No Food Coloring
Red:  8 Drops of Crimson, 2 drops of Red
Green: 6 drops of yellow and 3 drops of Blue

For some extra Christmas pizzazz, liberally add some Nonpareils Christmas Sprinkles to the warm Rice Krispie Treat mixture.

How to Make the Rice Krispie Treat Bites

Step 3: To make the Rice Krispie Treat Bites, allow the mixture to cool enough so you can handle it but that it is still malleable.  To get Rice Krispie Bites that were the same sized I measured .6 oz. of the mixture on my food scale and then used my hands to roll it into a ball. If the mixture is too sticky, rub your fingers with some butter. I was able to make 12 Rice Krispie Treat Bites from each 3 cup batch of Rice Krispie Treat Mixture.

Christmas Rice Krispie Treat Bites

Christmas Rice Krispie Treat Bites are yummy, bite-sized balls of crunchy, marshmallow-y delight. Easy to make and even better to eat.

Ingredients

  • 9 cups Kellogg’s Rice Krispie Cereal
  • 9 cups Mini Marshmallows
  • 9 tablespoons Butter (Sweet Cream, Salted)
  • Wilton Color Right Food Coloring - Red, Crimson, Yellow, Blue
  • Nonpareils Christmas Sprinkles

Instructions

You will need to make three batches of Rice Krispie Treat mixture - one for each of the three Christmas colors - Red, Green and White.

Directions for a single batch of Rice Krispie Bites

  1. Melt 3 tbsp. Butter in a medium pan.
  2. Add 3 cups of Mini Marshmallows and stir until the marshmallows are completely melted.
  3. Take the pan off the heat.
  4. Add food coloring and mix.
  5. Add 3 cups of Rice Krispie Cereal and mix until they are completely covered with the marshmallow mixture.
  6. Add the Christmas Sprinkles (Optional)
  7. Allow the Rice Krispie Mixture to cool slightly.
  8. Measure .6 oz of mixture and roll into a ball.
  9. Allow Rice Krispie Bites to cool.
  10. Repeat for the other two Christmas colors.
