We have gone a little funfetti crazy. I thought our Halloween Funfetti Cupcakes turned out so cute that we should do them again for Thanksgiving. Laurie vetoed my Thanksgiving funfetti cupcake idea, but after threatening to filibuster she caved to Christmas Funfetti Cupcakes. I just think they are so cute and so easy to make.
How to Make Christmas Funfetti Cupcakes
You will need:
- White Cake Mix (or a homemade white cake recipe)
- Christmas Colored Sprinkles
- Wilton Color Right Food Coloring – Green
- Best Buttercream Frosting Recipe
- Decorating Bags
- Wilton 2D Frosting Tip (optional)
You need to use these cylinder shaped sprinkles to get the effect you want in the baked cupcakes. The little tiny balls or the shaped sprinkles will not melt during the baking process and you won’t get that pretty “funfetti” look. We used these green, red and white sprinkles. The white are going to disappear but that’s okay – we wanted a traditional red and green Christmas.
Make the cake batter according to the directions on the box. After the batter is completely mixed, add 1/2 cup of the sprinkles and fold them into the batter. Here’s a tip – where the sprinkles are concerned more is not better. We tried this once for a pink funfetti cake and added more than 1/2 cup, thinking more sprinkles would make the funfetti pattern even better but that was not the case. There was too much color in the cake and it turned out looking like we had tinted the cake with pink food coloring.
Here is how the inside of the cupcakes turned out. So pretty and Christmas-y. We frosted the cupcakes with our Best Buttercream Frosting using a pastry bag and a Wilton 2D Frosting Tip, As a final touch we topped the Christmas Funfetti Cupcakes with some additional Christmas themed sprinkles. These cupcakes are so easy to make, so pretty and everyone will love the Christmas colors!
