We really love these Chocolate Cookies with Raspberry Frosting.  The soft and cakey chocolate cookies combine perfectly with the delicious sweet and creamy homemade Raspberry Frosting.  Pretty, yummy, and easy to make – our absolute favorite dessert combination. Make them for those special someones in your life for Valentine’s Day (and then make them for yourself the rest of the days of the year!).

Ingredients you will need

All the ingredients you will need to make Chocolate Cookies including Flour, Eggs, Raspberry Frosting,  Butter, Vanilla, Chocolate Wafers, Cocoa Powder, Granulated Sugar and Brown Sugar.

Step 1: Add the sugars and softened butter to a mixing bowl.
Step 2: Cream together until light and fluffy.
Step 3: Add the eggs and vanilla extract. mix until thoroughly combined.

Step 5: Add all the dry ingredients (flour, cocoa powder, salt, and baking soda) to a separate bowl.
Step 6: Whisk the dry ingredients together until combined.
Step 7: Add the dry ingredients to the cookie dough. 
Step 8: Mix until just combined. (Do not overmix after you add the flour mixture.)

Baking Instructions

Step 9: Take a spoonful of cookie dough and roll it into a ball.  Slightly press down the cookie dough ball.
Step 10: Bake the cookies in an oven preheated to 350 degrees for 9-11 minutes. Allow the cookies to cool.

How to make the Raspberry Frosting

Step 11: While the cookies cool, make up a batch of our delicious homemade The Best Raspberry Frosting.  (You can find the recipe and detailed instructions right here.)

Frosting the Cookies

Step 12: Use a knife to frost the Chocolate Cookies with The Best Raspberry Frosting.
Step 13: Place 10-12 Ghirardelli Chocolate Melting Wafers in a plastic bag. Melt them in the microwave.
Step 14: Once melted, cut the tip off the bag and drizzle the chocolate over the Raspberry Frosting.  (Make sure you only cut the very very tip of the bag. You only want a small hole to give yourself more control over the drizzle.)
Step 15: Allow the chocolate drizzles to harden and the frosting to set up before serving.

How long will with these cookies last?

Like most cookies, they will taste best the first few days after you bake them. If you store them in the refrigerator, they will last up to a week. And you can freeze them for up to one month. Always store cookies in an airtight container and wait to put them in the container until they are fully cooled.

What to do if your Raspberry Frosting doesn’t have enough “raspberry” flavor.

The “raspberry” flavor in the frosting will continue to develop over time. This is a frosting that tastes best after a couple of hours or ideally, the next day. So you might want to make the frosting the night before you make the cookies.

  • 3/4 cup Granulated Sugar
  • 2/3 cup Brown Sugar (packed)
  • 2 Large Eggs
  • 1 teaspoon Vanilla
  • 2 1/4 cups All-Purpose Flour
  • 2/3 cup Unsweetened Cocoa Powder
  • 1 teaspoon Baking Soda
  • 1/4 teaspoon Salt
  • 1 Batch The Best Raspberry Frosting
  • 10-12 Ghirardelli Chocolate Melting Wafters
