Frosting the Cookies
Step 5: Gather up your cookies and your Marshmallow Frosting.
Step 6: Use a knife to frost the Chocolate Cookies with the frosting.
Step 7: Place 10-12 Ghirardelli Chocolate Melting Wafers in a plastic bag. Melt them in the microwave. Once melted, cut the tip off the bag and drizzle the chocolate over the Mint Frosting. (Make sure you only cut the very very tip of the bag. You only want a small hole to give yourself more control over the drizzle.)
Step 8: Allow the chocolate drizzles to harden and the frosting to set up before serving.

Are these cookies soft, chewy or crispy? I’m on the hunt for a good chocolate cookie recipe to blend with Andes mints.
I’d say they were soft and brownie like.
Hi Laurie,
does one batch of frosting pair well with one batch of cookies? The frosting recipe looks like it makes a lot, so i’m considering halving it. What do you recommend?
Hi Mary Jo, we usually have leftover frosting when we make a full batch of frosting. A half batch will probably work you just might need to do a thinner layer of frosting than we did in the pictures.
These cookies look so cute, and they’re delicious. I tried the recipe last week and it’s great, the frosting blends with the chocolate flavor in a way I just can’t describe cause I want to go and make more of them!
Hi Amy! We love them too. We’re so glad you like them!!!
