Easter Rice Krispie Treat Bites are yummy, bite-sized balls of crunchy, marshmallow-y delight.  They are so easy to make and even more delicious to eat.  Make up a batch for your Easter guests or a Spring Bunch. They’d also be a fun dessert for the kids to make for Mom on Mother’s Day.  We’d be happy to eat them any old day!

How to Make the Rice Krispie Treat Mixture

The base for our Easter Rice Krispie Treat Bites is our Best Ever Rice Krispie Treat Recipe which we have adjusted and perfected over the years until it is now absolutely the best Rice Krispie Treat recipe we have ever tasted.  You can find all the directions you’ll need to make these delicious treats right here.  We made four different colors of bites for our Easter treat – purple, blue, pink, and yellow.  You will find the directions you need for making colored Rice Krispie Bites below.

How to make the Pink Rice Krispie Treat Bites

First, make a 2 Cup batch of Rice Krispie Treat mixture (Tbsp. Butter/2 Cups Mini Marshmallows/2 Cups Cereal).  Add the food coloring BEFORE you add the Rice Krispie Cereal. To create this pretty shade of Pink we used 2 drops of Pink Wilton Color Right Food Coloring.  Allow the pink Rice Krispie Treat mixture to cool enough so you can handle it but that it is still malleable.  To get Rice Krispie Bites that were the same sized I measured .5 oz. of the mixture on my food scale and then used my hands to roll it into a ball. If the mixture is too sticky, rub your fingers with some butter.  I was able to make 12 Rice Krispie Treat Bites from this 2 cup batch of Rice Krispie Treat Mixture.

How to Make Yellow Rice Krispie Treat Bites

For the yellow Rice Krispie Treat Bites, follow the directions for the pink Rice Krispie Treat Bites but add 3 drops of yellow Wilton Color Right Food Coloring to the marshmallow mixture before you add the Rice Krispie Cereal.

How to Make Blue Rice Krispie Treat Bites

For the bright blue Rice Krispie Treat Bites, follow the directions listed above.  We got this pretty color of blue by using the following amounts of 2 drops of Blue Wilton Color Right Food Coloring to the marshmallow mixture before you add the Rice Krispie Cereal.  Don’t add too much blue food coloring or you will end up with Aqua/Teal Rice Krispie Bites as the yellow from the marshmallow mixture and the Rice Krispie Cereal will mix with the blue food coloring to make teal.

How to Make Purple Rice Krispie Treat Bites

For the purple Rice Krispie Treat Bites, follow the directions listed above.  We got this pretty color of purple by using 6 drops of pink and 2 drops of blue Wilton Color Right Food Coloring to the marshmallow mixture before we added the Rice Krispie Cereal.

Storage/Serving Instructions

Allow the Easter Rice Krispie Treat Bites to cool before you store them. They are so fun and colorful and delicious – we guarantee that your family will love them! This is a great Easter treat and you can make it well ahead. Store the Rice Krispie Treats in an airtight container and they will last for 3-4 days before they start to get too stale.  You can freeze them for up to 3 months.

Easter Rice Krispie Treat Bites

Yield 48 Rice Krispie Treat Bites

Yummy, bite-sized balls of crunchy, marshmallow-y delight, our Easter Rice Krispie Treat Bites are an easy-to-make Easter, Mother's Day, or Spring dessert.

Ingredients

  • 8 cups Kellogg's Rice Krispies Cereal
  • 8 tablespoons Butter (We use Salted, Sweet Cream Butter)
  • 8 cups Mini Marshmallows
  • Wilton Color Right Food Coloring - Yellow, Blue and Pink

Instructions

You will need to make four batches of Rice Krispie Treat mixture - one for each of the four spring colors Blue, Pink, Purple and Yellow.

Directions for a single batch of Rice Krispie Bites

  1. Melt 2 tbsp. Butter in a medium pan.
  2. Add 2 cups of Mini Marshmallows and stir until the marshmallows are completely melted.
  3. Take the pan off the heat.
  4. Add food coloring and mix.
  5. Add 2 cups of Rice Krispie Cereal and mix until they are completely covered with the marshmallow mixture.
  6. Allow the Rice Krispie Mixture to cool slightly.
  7. Measure .5 oz of mixture and roll into a ball.
  8. Allow Rice Krispie Bites to cool.
  9. Repeat for all of the Rice Krispie Bites colors.

Notes

Food Coloring Amounts
PInk: 2 drops of Pink Wilton Color Right Food Coloring
Yellow: 3 drops of yellow Wilton Color Right Food Coloring
Blue: 2 drops of Blue Wilton Color Right Food Coloring
Purple: 3 drops of pink and 2 drops of blue Wilton Color Right Food Coloring
