Brownie Gingerbread Cupcakes are a unique twist on a classic – brownies plus homemade gingerbread plus buttercream frosting in one unique and delicious cupcake.

Inspired by our yummy Brownie Cupcake for Halloween we opened up the Two Sisters Test Kitchen to come up with a Christmas Holiday version of this unique cupcake.  Our Brownie Gingerbread Cupcakes were the result and boy do they taste great.  The Brownie and Homemade Gingerbread is a great flavor combination and everything tastes great when it is topped with our delicious The Best Buttercream Frosting.  So grab your bottle of Molasses and let’s do some holiday baking!

How to Make the Cupcakes

Step 1: Mix up a batch of brownies.  We used Ghirardelli Chocolate Supreme Brownie Mix.
Step 2: Add a spoonful of brownie mix to the cupcake liners.  The brownie batter should only go about 1/3 of the way up the cupcake liner.  You want more cake batter than brownie batter.  You’ll have some brownie batter left over … we filled up some cupcake liners and made ourselves some mini brownie cupcakes. Yum!

Step 3: To make the Gingerbread cake batter, cream together the softened butter and brown sugar in a mixer.
Steps 4-5: Add the egg, milk, and molasses and beat on medium speed for 1-2 minutes. The mixture will not be fully incorporated.
Step 6: In a separate bowl add and mix the flour, cinnamon, baking soda, baking powder, salt, ground ginger, and nutmeg. Add flour mixture to the wet ingredients.  Mix until incorporated. Do not over-mix.

Step 7: Then cover the brownie batter with the gingerbread cake batter.  Bake the cupcakes as you normally would, for 20-22 minutes in a 350-degree oven. Allow the cupcakes to cool.

How to Make the Frosting

Step 8: White the cupcakes are cooling, make a batch of our Best Buttercream Frosting to top your Brownie Gingerbread Cupcakes.  It is easy to make and so delicious.  You will find the recipe and detailed instructions on how to make it here.  

Decorating the Cupcakes

Step 9: We used a pastry bag and a Wilton 2D Decorating Tip to swirl on the Buttercream Frosting and then we topped our Brownie Gingerbread Cupcakes with some Christmas Sprinkles. So pretty. These Brownie Gingerbread Cupcakes are so yummy.  What a great Christmas cupcake!  The Brownie and homemade Gingerbread cake taste so great together.  This really takes Holiday cupcakes to the next level and will surely wow your Christmas party guests this year.

Ingredients

Gingerbread Cake Batter

  • 1/2 cup Butter, softened to Room Temperature (Sweet Cream, Salted)
  • 1/2 cup Brown Sugar (packed)
  • 1 Large Egg
  • 1/2 cup Milk
  • 1/2 cup Molasses
  • 1 1/3 cup All-Purpose Flour
  • 1 heaping teaspoon Cinnamon
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 1/2 heaping teaspoon Ground Ginger
  • 1/2 teaspoon Nutmeg

Brownie Batter

  • 1 box Brownie Mix

Frosting

Instructions

  1. Cream together butter and brown sugar in mixer
  2. Add egg, milk and molasses and mix. Mixture will not be fully incorporated.
  3. In medium bowl add dry ingredients and mix.
  4. Add flour mixture into wet ingredients.
  5. Mix until incorporated. Do not over mix
  6. Make a batch to brownies using instructions on box.
  7. Add brownie mixture to cupcake liner. Fill 1/4 way up liner.
  8. Add gingerbread cupcake mixture to the cupcake liner so it is 3/4 filled.
  9. Bake in 350 oven for 20-22 mins.
  10. Frost with The Best Buttercream Frosting
