When Laurie and I were growing up, my mom would use any excuse to make Apple Cake.  Every holiday and family get-together we had Apple Cake.  I finally put my foot down and said that I didn’t want apple cake anymore.  If Laurie is telling this story, she would say that I hated Apple Cake and would not let my mom make it anymore.  Not true.  Apple desserts are yummy.  This is one of my favorite versions of this classic recipe … Apple Bread Mini Loaves. Chock full of tart apples and smothered in sweet and creamy homemade Cream Cheese Frosting … this recipe is a winner! Can something taste like a cool Fall day?  If they can, this would be it. This dessert is a great option for your Thanksgiving Dinner guests who don’t really like pie or to wrap up in cellophane to give to a neighbor as a holiday gift.   Or you just might want to eat one yourself with a cup of hot coffee!

How to Make the Apple Bread

Step 1: Peel and dice enough apples so you have 2 cups of chopped apples.
Step 2: In a mixing bowl, add the eggs, sugar, oil, vanilla, and apples. Fold together until well mixed.

Step 3: Add the dry ingredients to the bowl.
Step 4: Stir with a spoon until just combined.  Don’t over-mix.

Step 5: Spoon the Apple Bread batter into greased mini loaf pans and bake in an oven that has been preheated to 350 degrees for approximately 20 minutes. Allow the Apple Bread loaves to cool.

Step 6: While your Apple Bread is cooling, make a batch of our yummy homemade The Best Cream Cheese FrostingYou can find the ingredients and directions you’ll need right here.

Step 7: Frost the top of the loaves with the frosting and for a special touch you can dust the frosting with some Ground Cinnamon. Pretty!

Ingredients

  • 1 cup Granulated Sugar
  • 1/4 cup Oil
  • 1 Large Egg
  • 1 teaspoon Vanilla Extract
  • 2 cups Green Apple (diced)
  • 1 1/2 Cups All-Purpose Flour
  • 2 heaping teaspoons Cinnamon
  • 1/2 teaspoon Baking Soda
  • 1/4 teaspoon Baking Powder
  • 1 batch of our The Best Cream Cheese Frosting

Instructions
