When Laurie and I were growing up, my mom would use any excuse to make apple cake.  Every holiday and family get together we had apple cake.  I finally put my foot down and said that I didn’t want apple cake anymore.  If Laurie is telling this story, she would say that I hated apple cake and would not let my mom make it anymore.  Contrary to her belief, I don’t hate apple cake.  It is really delicious, but no one wants to have it at every occasion.     Now that I am in charge of the family baking we have a version of apple cake the right amount which is every now and again.  This is one of my favorite versions … Apple Bread Mini Loaves.

How to make Apple Bread Mini Loaves

Apple Bread Ingredients:

  • 1 cup Sugar
  • 1/4 cup Oil
  • 1 Egg
  • 1 tsp. Vanilla
  • 2 cups Green apple (diced)
  • 1 1/2 Cups Flour
  • 2 heaping tsp. Cinnamon
  • 1/2 tsp Baking Soda
  • 1/4 tsp. Baking Powder
  • Mini Loaf Pan

Cinnamon Cream Cheese Frosting Ingredients:

  • 1/2 Cup Butter (Sweet Cream Salted)
  • 8 oz. block of Cream Cheese
  • 3 tsp. Vanilla
  • 4 cups Powdered Sugar
  • 1 tsp. Cinnamon

Diced Apples for Apple Bread

Peel and dice enough apples so you have 2 cups of chopped apples.

Apple Bread batter

Mix egg, sugar, oil, vanilla, and apples. Mix well. Add dry ingredients. Stir still just combined.  Don’t over mix.

Spoon batter into Mini Loaf pan

Spoon Apple Bread batter into a mini loaf pan.  Bake at 350 for 20 mins.

We topped our Apple Mini Loaves with Cinnamon Cream Cheese Frosting.  To make the frosting:  Beat cream cheese, butter and vanilla in a mixer until blended.  Add powered sugar a cup at a time and continue to mix until sugar is incorporated. Finally, add cinnamon.

Apple Bread Mini Loaves
Ingredients
  • Apple Bread:
  • 1 cup Sugar

  • 1/2 tsp Baking Soda

  • Cinnamon Cream Cheese Frosting:

Instructions
Apple Bread:

  4. Cool.
  5. Frost with Cinnamon Creme Cheese Frosting

  3. Finally, add cinnamon.

  5. I was able to make 3 mini bread loaves from this recipe, but, they were not done in 20 min.. Tooth pick came out clean after about 32 min..

  7. I would like to use the cream cheese frosting for cupcakes. How many cupcakes would this amount frost?

    • Hi. It really depends on how you frost them. Are you going to swirl on the frosting with a pastry bag or spread on the frosting with a knife?
